LEMON MUSHROOM SALAD

We love the interesting flavour combinations in this salad from All Sorts of Salads by Chantal Lascaris...

INGREDIENTS

Olive oil for frying

250 g mushrooms, roughly chopped

1/2 tsp crushed garlic

2 cups mixed green leaves

4 hard-boiled eggs

1/4 cup goat's milk cheese, cut into 0,5 cm cubes

Dressing

1/4 cup olive oil

2 Tbsp lemon juice

salt and pepper to taste

METHOD

1. Heat the oil in a frying pan and fry the mushrooms and garlic until brown and soft.

2. Remove from the heat and set aside to cool.

3. Slice the hard-boiled eggs in half and place on top of the greens, then scatter over the cooled mushrooms followed by the goat's milk cheese cubes.

4. Mix the dressing ingredients and pour over the salad.
