CHOC NUT TRUFFLES

We're nuts about these deliciously healthy truffles by Birgitta Höglund.

INGREDIENTS

Makes 12 - 14 small truffles

4 tablespoons cashew nut butter

2 tablespoons almond butter

2 tablespoons cocoa nibs

2 tablespoons unsweetened cocoa powder

1 1/2 teaspoon vanilla powder

A pinch of crumbled salt flakes

For garnish:

100 g shredded coconut, chopped nuts or cocoa powder to cover the truffles

METHOD

Mash all the ingredients (except those for the garnish) well with a spoon.

Shape the dough quickly into a roll, cut into even pieces, and roll into small balls in your hands.

Pour the garnish into a small bowl and roll the truffles in it so that they are completely covered.

Keep the truffles in a covered container in the fridge for up to two weeks.
